A Sunday roast, a room the size of a conversation, and a kitchen you can hear from the bar.

The coaster tells you what kind of place it is before anyone does. Manly's Worst Kept Secret, printed in orange around a small line drawing, sitting on a slab of warm stone.

Arvvo went on a Sunday at the end of August. The line on the coaster is doing two jobs at once. It is a boast, and it is a warning to book.

Banco is at 17b Whistler Street and opens daily from 4:30pm. Happy hour runs the first ninety minutes: schooners at eight dollars, wine and highballs at ten.

You hear the kitchen

The room is small enough that the kitchen is part of the soundtrack. Pans, the short calls between chefs, jazz underneath all of it, and the conversation of the other tables sitting on top.

None of it competes. It layers.

The kitchen is open, so you watch a plate being built and then wait for it to reach you. That is a different anticipation to reading a menu, and most of the reason to sit at the bar rather than a table.

The first sip did the work

The recommendation from the bar was the Marauder, which arrived pale yellow in a coupe with black and white sesame across the top. Coconut milk and mango. The first sip is the kind that stops the conversation for a second.

The house focaccia came next. Two thick pieces, dark blistered crust, a quenelle of butter beside them. It is the right way to start and it sets the level for everything after it.

The roast

The Sunday roast runs every Sunday from 4:30pm until it sells out. Lamb, charred cabbage, roasted cauliflower, mushrooms, potato puree and a Yorkshire pudding, gravy over the lot.

Written down it sounds like a pub obligation. On the plate it is not. The puree in particular is made by someone who cared about it, which is the tell.

The service through all of this was warm without being a performance. The floor was paying attention to how the eating and drinking was actually going, not to whether the plates were still there.

The bartender was as generous with the wine list as the kitchen was with the plate. He walked through the range rather than pointing at a price, and the table landed on a Calura Appassimento 2023 from Puglia.

Iconic was the word written down at the table.

The chocolate tart finished it. Glossy, buckwheat scattered over the top, smoked mascarpone beside it and three dots of miso caramel down the plate. It is gluten free, which nobody makes a thing of.

The best part was not any single plate. At some point the eating stopped and the conversation turned to how much the table was enjoying it, which only happens in rooms that are paying attention.

A room this size cannot hide anything, which is the risk and also the appeal. Everything that happens is in earshot, so the kitchen and the floor have to be good on a Sunday the same way they are on a Friday.

Three hours in Manly on a Sunday, and none of it needed a special occasion to justify it.
